Baking Science- Honey whole wheat bread

I made this bread myself. I used a recipe from a friend of mine who makes bread on a regular basis. This bread is delicious. I teach a baking science class at a local university, and we discuss wheat and gluten development. We discuss the functions of wheat flour, good quality gluten, and factors that may affect gluten development. I love to bake, and I am a big fan of homemade bread.
